Traditional Indian Recipie - Vegetable Fried Rice

Ingredients � Basmati rice - 1 cup,soaked for 15 minutes � Ghee - 1 tbsp � Whole spices - 2 cloves,1'stick cinnamon and 1 cardamom � Onion - 1,thinly sliced � Carrot - 1,chopped � Capsicum - 1,small-chopped � Water - 2 cups � Salt to taste Method 1. In a pressure pan/cooker add the ghee and roast the whole spices for a minute. 2. Add the onions and roast till they slightly start changing the colour. 3. Mix in the carrots and capsicum and give a good stir. 4. Drain the soaked rice and add. 5. Stir well till everything is mixed. 6. Add the water and enough salt to taste and let it come to a boil. 7. Close with the cooker lid and cook for 2-3 whistles. 8. Let the cooker come to room temperature-open and fluff with a fork.

Oilless Green Chicken

Ingredients � 250gms Chicken � 2 Onions � 1tsp Ginger Garlic Paste � 5 Green Chillies � 1tsp Whole black Pepper � 1/2tsp Cumin Seeds � some Mint Leafs � some Corriender Leafs � 1tsp Salt � 2tsp Curd Method Grind ginger, garlic, green chillies, pepper, minf leaves, corriender leaf and salt. Mix chicken, curd and grinded mixture. Allow it for 15 Minuit to marinate. Then fry the marinated substance in slow fire. After 10 Minuit add water and allow for 5 more Minuit until water dries. Serve Hot with coriander decorated.

Chicken Soup and Fry in single recipie

Indegrends � 250gms Chicken (Cut into pieces) � 1 Egg (Beat well) � 1 Onion � 1 tsp Ginger Garlic Paste (Small pieces of ginger and garlics) � 1/2 tsp Pepper � 1/4 tsp Cumin Seeds � 1/2 tsp Black Pepper Curry leafs Directions Mix and Grind Onion, Ginger Garlic Paste, Whole Black Pepper seeds, Curry leafs and Cumin Seeds to form a paste. Boil chicken and the paste prepared with lid closed in a pan untill chicken is cooked. After chicken is cooked open the lid and boil for 5 minuits. Drain all the liquid soup from the pan into another container and boil separately. Add the egg and one piece chicken cut into small pieces from the boiling mixture soup. Once the egg is cooked inside the soup remove it from the flames. In a hot pan put the pepper powder, 2 spoons of top layer of soup and the boiled chicken, fry and serve hot with the soup.

Cooking chicken without Oil - Oilless Chicken Fry (South Indian Style)

Ingredients � 1/4 kg Chicken � 1tsp Ginger-Garlic Paste � 3 Onions (cut into small pices) � 1 Tomato � 2 Cinnamon � 3 Clove � 1 / 4 Trumeric Powder � Chili Powder, Pepper, Salt to Taste � 1tbsp Curd � Pandan Leaf � Salt to Taste Method Mix 1/3 rd of onion, Ginger-Garlic Paste,chicken ,turmaric powder, salt , cinnamon and clove and pandan leaf and set aside for 1/2 an hour and boil with 1 glass of water for 3 to 4 minuits. Take some liquid stock from the boiled mixture above. In a pan fry all the onions, add chilli powder, the liquid stock and leave for 1 minuit. Now add all the contents of the boiled mixture and cook for 5 minuits. Add some pepper powder and serve.

Malaysian Otak Otak (Veg and Non veg)

Ingredients Vegiterian Non Vegetarian � 500g soya or tofu or paneer � minced fish meat or chicken � 1 egg � 50g lemongrass � 100g Onions ( shallots prefered) (blended) � 80g garlic � 4 pieces kaffir lime leaf (thinly sliced) � 1 piece turmeric shoot (thinly sliceD) � 2 tsp curry powder � 60g red chilli powder � 50g coconut milk � 2 tsp kaffir lime juice � 1 tsp salt � 1 tsp seasoning powder Method : Combine all ingredients and mix well. Wrap the mixture with banana leaf and bake till cooked.

Another easy and different dish - Asparagus and mashroom stir fry

Ingredients � 100g asparagus � 70g fresh lily bulbs (pak hup) � 80g Mushrooms (Dry Black) � 60g carrot, cut into desired shapes � Some nuts steamed till it has become soft (if gingko nuts - 12 nos, steamed for 5 minutes) � 6 thin slices ginger � � tsp oil � � tsp flavoured Oil (sesame oil prefered ) � 1 tsp Vegetable stock � � tsp soya sauce � Dash of pepper � Salt and sugar to taste � 125ml water � � tsp cornflour Preparation Cut asparagus diagonally into short lengths. Break up fresh lily bulbs into petals and trim mushroom . Blanch asparagus and carrot in boiling water for less than 30 seconds. Drain and rinse under running tap water. Heat oil and sesame oil in a wok. Add ginger slices and little water until it starts to sizzle. Add mushrooms, carrot, asparagus and nuts. Stir in combined seasoning and stir-fry over high heat until mixture comes to a boil. Add fresh lily bulb and toss for a short while.

Microwave bread pudding

Ingredients � 2 cups milk � 1/2 cups sugar � 1/4 tsp. salt � 1/2 cups raisins � 1 tsp. vanilla � 2 eggs � 1 tsp. cinnamon � 3 cups soft white bread cubes � 1 tbsp. butter Preparation Combine milk, eggs, sugar, cinnamon, salt and vanilla in a dish (ceramic n glass works well). Beat and stir in rest of ingredients. Dot with butter and dust with cinnamon. Microwave at 50% 26-28 minutes. Let stand 5 minutes. (Combine sour cream, vanilla and brown sugar to taste and spoon over helpings!)

Bread Balls

Ingredients � Bread - 8 slices (or Equal amount of bread crumbs) � Coconut grated/ Any other powder or grated vegetable - 1 cup � Sugar - 3 tsp � Milk - 1/2 cup � Cardamom powder - 1 pinch Directions Take a blender and make the bread into fine bread crumbs. Now add coconut and sugar to the bread and mix well. Add cardamm powder and mix. Now slowly pour milk to this mix and make a soft dough. Heat oil in a pan. When the oil is hot, fry the bread balls into slight brown colour.

Healthy Laddu!! - Easy to Make :)

Ingredients � Wheat flour 2 cups � Granulated Sugar 1 1/4 cups � Milk Powder 2 tsp � Melted ghee 1 1/4 cups � Cardamom powder 1/2 tsp Directions Heat a pan and add the melted ghee. When it is hot, reduce the flame and add wheat flour. Increase the flame and stir thoroughly the wheat flour with the ghee for a few minutes, until it begins to give off a pleasant smell and starts to change its colour. Then add sugar and mix well. Remove from fire and Add milk powder and cardamom powder and mix well. Cool it a bit(do not cool completely, laddu should be made when the mixture is still hot)and with the hand make small balls of the mixture. Wheat flour laddu is ready.

Filling: Any Jam. (Any ????? /??????? ) Simple filling (Coconut scraps mixed with sugar) Pau Dough: � 3 3/4 cup (500 grams or 2.2 lbs) All purpose Flour (maidha/basin) � 1 tbs yeast (50 grams) � 1/2 cup sugar (100 grams) � 1 tsp baking powder � 1/4 cup shortening or oil � 1 to 1 1/4 cup warm water (200-250 grams) Dissolve dry yeast in half of the warm water. Add sugar to the mixture. Place flour, in a large mixing bowl and pour in the yeast mixture. Lightly mix using your hand. Turn out dough onto a clean, smooth surface like a glass or granite counter top. Knead the dough until it is well mixed. When the dough is well mixed, cover it with plastic wrap to prevent it from drying out. Cut off about 1/4 th of the dough and cover the rest. Roll this piece out into a long roll of about 2 inches in diameter. Cut off small portions off every 2 inches. Roll the smaller dough portions into balls. VEGNON - Vegetarian "chicken" pot pie (Difficult).

Ingredients: � 1 package vegetarian chicken ( Gardein vegetarian chicken scallopini ) , cut into 1/4 inch cubes � 6 cups vegetable stock � 1 cup yellow onion, diced � 1 cup carrots, peeled and diced � 1 cup green peas � 3/4 tsp thyme or pudhina, minced � 3/4 tsp sage or bay leaf , minced � 3/4 tsp salt (rock salt) � 3/4 tsp fresh ground black pepper � 1 tbsp nutritional yeast flakes (optional) � 1 tbsp soya sauce � 2-4 tbsp oil � 3/4 cup flour � 3/4 cup margarine � 1 puff pastry sheet rolled out to by 12x10 inches (made of all purpose floor just like chapathi but very thin - put in pan and remove) Preparation: Pre-heat oven to 375 degrees.(heating oven) Brown gardein scallopini in a sautee pan with 1 tablespoon canola oil. A sweet made just using 7 Cups !!!

Ingredients: � 1 Cup Basin Flour � 1 Cup Coconut Powder � 1 Cup Ghee � 1 Cup Milk � 3 Cup Sugar Step 1: Mix all these ingredients in a vessel for 20 Minuit.
